Cocoa powder has a water activity of about 0.3-0.4, per Iowa State University Extension.

That's low enough to keep it shelf-stable for a long time in a cool, dry, airtight container — the low moisture, not any preservative, is doing the work. [3]

Frequently Asked Questions

Is raw cacao safe to eat during pregnancy?

Moderate amounts are the general guidance, not an outright ban — but two separate concerns apply: caffeine and heavy metals.

Broader pregnancy-caffeine research puts the safety threshold at up to 300mg/day [18], while one major US hospital system's obstetric guidance is stricter, recommending under 200mg/day from all sources combined [17]. Either way, cacao itself contributes little: at USDA's 230mg caffeine per 100g [1], a typical 1-2 tablespoon (6-12g) serving adds only about 14-28mg.

The sharper concern for pregnancy is heavy metals, not caffeine. A medical-news review citing ACOG-relevant literature recommends pregnant people limit dark chocolate and cacao products because of documented lead and cadmium contamination linked to fetal neurodevelopment risk [16].

That finding is consistent with the broader contamination data below [2][15]. [4]

What are the heavy metal risks associated with raw cacao?

They're real, not theoretical. A multi-year US survey of 72 cocoa products tested between 2014 and 2022 found 43% exceeded California's lead limit and 35% exceeded its cadmium limit, though all stayed under the arsenic limit [2].

The two metals get in differently. Cadmium is absorbed from the soil by the cacao plant itself, while lead contamination happens mostly after harvest, from dust settling on beans during outdoor sun-drying.

Separate Consumer Reports testing found 23 of 28 dark chocolate bars would exceed California's lead and/or cadmium limits from just one 1oz daily serving [15]. Organic labeling was no protection — if anything, testing suggested organic products ran a higher risk of elevated levels. [8]

Is raw cacao the same as regular cocoa powder?

Not exactly, though the terms aren't strictly regulated and usage varies by brand.

Cacao generally refers to beans or products that are fermented and dried but not roasted, or only roasted at low temperature. In contrast, cocoa typically comes from beans that have been roasted and are often alkalized — also called 'Dutch-processed' — to tone down bitterness.

Both start from the same fermented, dried Theobroma cacao beans [11]; the difference is entirely in what happens after fermentation. [9]

How much raw cacao can I consume daily safely?

There's no official daily upper limit in the sources we reviewed, but two data points suggest a sensible ceiling.

Theobromine — cacao's dominant stimulant compound — has been linked to mild symptoms like sweating, trembling, and headache at roughly 50-100g of cocoa powder per day [21]. Separately, heavy-metal testing found that even a single 1oz (28g) daily serving of many dark chocolate and cacao products can already push an adult over California's lead and/or cadmium exposure limits [15].

Together, these point toward keeping regular intake modest — on the order of 1-2 tablespoons a day — especially for products that haven't been independently tested for heavy metals. [10]

Is chocolate/cacao actually a migraine trigger?

The evidence is weaker than the popular belief suggests.

A systematic review covering 25 studies found that a wide range of migraine patients — roughly 1.3% to 33%, depending on the study — self-report chocolate as a trigger. But when researchers actually tested it, all three placebo-controlled provocation studies found no significant difference in migraine attacks after eating chocolate.

The review's authors concluded there isn't enough evidence to call chocolate a genuine trigger. They note that craving chocolate before an attack may itself be an early migraine symptom, rather than chocolate causing the attack. [11]
