E330 — Citric acid

Why it’s used

A natural acid used to add tartness, adjust and stabilize pH, and act as a preservative/antioxidant by binding trace metals that would otherwise accelerate spoilage and off-flavors. Widely used in soft drinks, candy, jams, and canned foods.

USA — Allowed

Affirmed GRAS under 21 CFR 184.1033, usable in food with no limitation other than good manufacturing practice; commercial citric acid is produced by fermentation (e.g., Aspergillus niger) or extraction from citrus juice, per the regulation. Source (2026-07-22)

EU — Allowed

Authorised as E330 under Annex II to Regulation (EC) No 1333/2008, generally at quantum satis levels; EFSA's 2020 re-evaluation of citric acid as a food additive did not raise a safety concern at reported uses and use levels. Source (2026-07-22)
