An emulsifier used mainly in bread and other yeast-leavened baked goods, where it strengthens the dough's gluten network to improve loaf volume, crumb structure, and shelf life. Widely known by its acronym, DATEM.

GRAS under 21 CFR 184.1101 as "diacetyl tartaric acid esters of mono- and diglycerides," made by reacting diacetyl tartaric anhydride with mono- and diglycerides from edible sources; usable in food with no limitation other than current good manufacturing practice, and "DATEM" may be used as the labeling name.
