Why it’s used

A thickener, stabilizer, and gel-enhancer derived from the seeds of the carob (locust bean) tree; used to improve texture and prevent ice-crystal formation in ice cream, and to thicken dairy products, sauces, and baked goods, often in combination with other gums.
