Why it’s used

An emulsifier used mainly in chocolate, chocolate coatings, and cocoa products, where it lowers viscosity and yield value so less cocoa butter is needed for a smooth, flowing texture. It's often used alongside or in place of soy lecithin.

Authorized food additive under Annex II to Regulation (EC) No 1333/2008, chiefly for chocolate/cocoa products, with a maximum permitted level of 10 g/kg.
