Why it’s used

A synthetic, low-calorie soluble fiber and bulking agent made from glucose, sorbitol, and citric acid. It's used to replace the bulk and texture lost when sugar or fat is reduced in foods like baked goods and dairy desserts, and it also functions as a prebiotic dietary fiber.
