Why it’s used
A zero-calorie, high-intensity artificial sweetener (about 200x sweeter than sugar) used in diet sodas, sugar-free desserts, and chewing gum. It stays stable at high temperatures, so it also appears in baked goods, and is frequently blended with other sweeteners like aspartame or sucralose to round out the taste profile.
